Corn Mac and Cheese

We've seriously upped the Mac and Cheese game with the additions of Golden Circle Corn, sour cream and paprika. You HAVE to try this!

Ingredients

Ingredients

For corn: 

1/4 cup mayonnaise 

1/4 cup sour cream

1/2 cup fine parmesan cheese

1/2 tsp chilli powder

1 garlic clove, minced

1/4 cup coriander

1 can Golden Circle Corn

For sauce: 

2 tbsp butter

1 tbsp olive oil

2 tbsp flour

3 cups milk

350g of shredded cheese of your choosing (we recommend a blended mix)

1/2 tsp salt

Freshly cracked pepper

Paprika 

For pasta:

350g Macaroni or pasta shells

Method

  1. Boil water for pasta
  2. For the corn mix; combine Golden Circle Corn, mayonnaise, sour cream, chilli powder, garlic and coriander in a mixing bowl
  3. Stir and set aside
  4. Add pasta to boiling water
  5. In a saucepan over a low-medium heat, add oil, butter and flour and stir for around 2 minutes
  6. Whisk in milk and cook until thickened
  7. Add cheese and stir through until melted
  8. Drain cooked pasta and add cheese mix
  9. Stir through and serve
  10. Add corn mix to top
  11. Garnish with paprika and pepper
  12. Enjoy!
