Mini Golden Corn Quiches

For a beautiful rich, silky finish I’ve used cream in these quiches, but if you’d prefer a lighter version, then feel free to use milk. They make a great lunch box idea or are fabulous for kid’s birthday parties. They can be made in advance and then frozen until you’re ready to heat and use.

Ingredients

3 sheets frozen puff pastry, partially thawed
4 eggs
¼ cup thickened cream
270g can GOLDEN CIRCLE Creamed Corn
100g sliced leg ham, chopped
2 spring onions, sliced
Freshly ground black pepper and salt, to taste
½ cup grated tasty cheese

Method

  1. Cut 24 x 7cm rounds from pastry sheets.  Press into 2 lightly oiled x 12 ½ cup patty pan tins. Prick bases with a fork and set aside.
  2. Whisk together the eggs and cream. Fold in the GOLDEN CIRCLE Creamed Corn, ham and spring onion and season to taste with freshly ground pepper and salt.
  3. Spoon mixture into pastry cases, sprinkle with cheese and bake in a preheated oven of 200˚C for 12 – 15 minutes or until golden and set. Serve warm from the oven or at room temperature.
