Pineapple Granita with Mint & Lime Sugar

This recipe presents like a restaurant quality dessert and is so delicious and refreshing too.  If possible, process the mint and lime sugar just before serving, as although it tastes just as wonderful, it loses the bright green vibrant colour shortly after processing..

Pineapple Granita:
825g can GOLDEN CIRCLE Crushed Pineapple in Syrup
¼ cup caster sugar
2 cups water

Mint & Lime Sugar:
½ cup white sugar
2 tbsp mint leaves
1 tsp finely grated lime zest

Method

  1. Place the Golden Circle Pineapple and the other granita ingredients in a saucepan over medium heat and stir until sugar dissolves. Simmer for a further 2 – 3 minutes, remove from the heat and allow to cool. Pour into a 20cm square cake tin and freeze for 4 hours or until firm. Otherwise, freeze overnight and allow to stand for 1 hour before processing.
  2. For the mint and lime sugar; combine all ingredients in a food processor and blend until well combined. Transfer to a bowl and set aside.
  3. Transfer granita to a food processor. Process for 30 seconds or until smooth. Divide granita between 4 tall glasses topped with the mint and lime sugar.
