Pineapple & Cinnamon Scrolls
These scrolls are delicious served for morning tea or as a treat in school lunches. They're quick and simple to make and no more difficult than whipping up a batch of scones - but the eating pleasure will surpass a scone anyday... I know that's a big call, but they're certainly as enjoyable anyway! The sweet pineapple tastes scrumptious with the cinnamon making this a great Golden Circle pineapple recipe!
3 ½ cups SR flour
60g unsalted butter
1 ½ cups milk
½ cup COTTEE'S Raspberry Jam
825g can GOLDEN CIRCLE Pineapple Pieces in Juice, well drained on paper towel
2 tsp ground cinnamon
Extra milk for brushing
2 tbsp sugar
Preheat oven to 200°C. Combine flour and butter in a food processor and process until well combined. Add the milk and pulse until just combined. Turn out onto a floured surface and knead until smooth.
Roll dough into a 30cm x 40cm rectangle. Spread jam evenly over dough, leaving a 2cm border around edges then sprinkle with GOLDEN CIRCLE pineapple pieces and cinnamon. Starting from the long side, roll up dough tightly. Cut into 10 even scrolls.
Arrange scrolls on a baking paper lined oven tray. Brush with extra milk and sprinkle with sugar. Bake for 25 minutes, or until golden brown. Stand for 5 minutes before serving
