Ingredients

  • 1 x 440g can GOLDEN CIRCLE Crushed Pineapple
  • 6 eggs (hard boiled)
  • ¾ cup cooked rice
  • 2 onions (chopped)
  • 1 tablespoon butter
  • 1 tablespoon vinegar
  • 2-3 tomatoes (chopped)
  • small piece green ginger (finely chopped)
  • salt & pepper
  • 1 tablespoon cornflour blended with little soy sauce

Method

Fry onion in butter until soft, add tomatoes, vinegar, salt and pepper, ginger and crushed pineapple contents from can. Simmer for 5 minutes.

 

Add cornflour and soy sauce and stir until thickens.

 

Pile hot rice onto a large serving dish, place eggs cut in half on top and coat with the sauce. Serve hot, alone or with a green salad.
