Method

Wash mint leaves, drain and put into saucepan with 1 cup water, sugar, lemon juice and rind and pineapple juice. Bring to boil and simmer for 5 minutes. Add remaining 2 cups of water and allow to cool. Strain.

 

Colour with a few drops of green colouring. Chill. 

 

Add pineapple pieces, mint leaves and ice cubes before serving. Decorate each glass with slices of lemon.
