Pineapple Beef Curry

Ingredients

  • 1 tablespoon oil
  • 1 clove garlic (crushed)
  • 1 tablespoon curry powder
  • 1 onion (chopped)
  • 500g beef steak (cubed)
  • 1 carrot (sliced)
  • 2 sticks celery (chopped)
  • 1 x 440g can GOLDEN CIRCLE Pineapple Pieces
  • 1½ cups chicken stock
  • 1 cup raw rice
  • salt and pepper
  • 1 tablespoon coconut

Measurements guide

Method

Fry garlic and curry powder in oil, add meat and brown well. Add onion, carrot and celery, stir and cook few minutes. Add pineapple and juice, stock, rice, salt and pepper and coconut.

 

Simmer for 1 hour until meat is tender.
