Chicken with Pineapple Orange Sauce

Ingredients

  • 1½ kg chicken (pieces)
  • 2 tablespoons dry sherry (optional)
  • 1 clove garlic (crushed)
  • 1 x 440g can GOLDEN CIRCLE Pineapple Pieces (drain, reserve liquid)
  • juice and rind of 1 orange
  • 1 tablespoon cornflour
  • 60g raisins

Method

Place chicken pieces in greased baking pan. Mix together the reserved pineapple liquid, sherry and garlic and pour over chicken. Bake 190°C for 1 hour or until tender.

 

Place in saucepan juice strained from baking dish, juice and rind of orange, pineapple pieces, cornflour, cook until thickened, add raisins.

 

Place chicken on serving dish and pour sauce over chicken. Serve with vegetables.
