Do not allow butcher to saw shanks – use shanks from forequarter of lamb. Wipe with a damp cloth. Place in one row in a rectangular glass or earthenware dish.
Mix remainder of ingredients except drained pineapple slices. Pour over shanks and allow to marinate at room temperature for 4 hours, turning often.
Barbecue over glowing coals, not too close to heat, brushing with marinade as shanks cook. Cook for 30-40 minutes, turning often. 5 minutes before end of cooking time, place drained pineapple slices on barbecue and brown lightly.
Note shanks can be successfully grilled in a cooking range under medium heat – following instructions as for barbecue.
