Golden Glaze Ham with Sliced Pineapple

Ingredients

  • 1kg canned ham
  • 1 x 440g can GOLDEN CIRCLE Pineapple Slices
  • ½ cup sieved apricot jam
  • 5cm piece cinnamon stick
  • ⅓ cup white vinegar
  • ½ teaspoon whole cloves
  • 10 whole allspice
  • ½ cup sugar
  • 1 thinly sliced unpeeled orange

Method

Cut ham into thick slices, reshape and tie with sufficient string to keep ham in shape.

 

For spiced pineapple: place pineapple in large saucepan with syrup, add cinnamon stick, vinegar, cloves, allspice, sugar and orange. Bring slowly to boil, simmer uncovered for 5 minutes, cover and allow to cool. Flavour is improved if left to stand overnight.

 

For the glaze: heat apricot jam and combine with 1 cup spiced pineapple liquid, keep warm.

 

Place ham in shallow baking dish, brush with glaze, bake 35 minutes in a moderate oven, basting frequently.

 

Remove string and surround base with spiced pineapple slices and serve juice separately in a sauce bowl. May be served warm or cold.
