Ingredients

  • 1 cup diced green capsicum
  • 1 onion (chopped)
  • ½ cup water
  • 1 tablespoon French mustard
  • salt and pepper to taste
  • 4 cups cooked rice
  • 1½ cups diced cooked ham
  • ½ cup milk
  • 1 x 440g can GOLDEN CIRCLE Pineapple Slices
  • 1 tablespoon brown sugar
  • slices of red capsicum
  • parsley sprigs

Method

Partially cook the green capsicum and onion in the water. Add mustard, salt, pepper, rice, ham and milk. Simmer until the milk is almost absorbed.

 

Place in a greased casserole dish. Arrange the drained pineapple slices on top and sprinkle with brown sugar. Bake at 190°C for 15 minutes.

 

Garnish with red capsicum and parsley.
