Pineapple Beef and Pork Loaf

Ingredients

  • 500g ground beef
  • 500g pork sausage mince
  • ½ cup soft breadcrumbs
  • 1 tablespoon grated onion
  • 1 tablespoon chopped green pepper
  • 1 egg (beaten)
  • 1 teaspoon salt
  • 1 x 440g can GOLDEN CIRCLE Crushed Pineapple
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard
  • 1 tablespoon vinegar
  • 1 tablespoon cornflour

Method

Mix beef, sausage mince, breadcrumbs, egg, onion, green pepper, salt and 3 tablespoons of the crushed pineapple. Press lightly into greased loaf pan and bake at 180°C for one hour.

 

Drain off excess fat and invert on to oven-proof platter, return to oven for 15 minutes to colour sides and top. Blend cornflour with a little pineapple liquid. Bring remaining ingredients to the boil. Thicken with cornflour. Add a little chopped pimento if liked.

 

Pipe creamed potatoes around loaf, pour sauce over top and serve. Serves 6.
