Ingredients

  • 1 kg pork spare ribs
  • 1 x 440g can GOLDEN CIRCLE Pineapple Slices (drain, reserve liquid)
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons tomato sauce
  • 2½cm piece green ginger
  • 2 dessertspoons cornflour
  • 1 cup water

Method

Place spare ribs in saucepan, cover with water. Bring to boil, remove from heat, drain to remove excess fat. Put in pan.

 

Combine pineapple liquid, honey, soy sauce, lemon juice, tomato sauce and green ginger, pour over spare ribs and marinate for at least an hour.

 

Drain and reserve marinade liquid. Place spare ribs on wire rack over baking dish and bake in moderate oven 30-35 minutes, brushing occasionally with reserved liquid.

 

To provide a sauce, mix cornflour to a smooth paste with water, add to reserved marinade liquid and stir over heat until thickened. Place ribs on hot boiled rice, pour sauce over and decorate with grilled pineapple slices and parsley.
