Golden Circle Pineapple Salmon Loaf Recipe

Ingredients

  • 1 x 450g can cooking salmon
  • 2 cups soft breadcrumbs
  • 1 onion (finely chopped)
  • 2 teaspoons grated lemon rind
  • chopped parsley 
  • salt and pepper
  • 2 eggs (beaten slightly)
  • ½ cup evaporated milk
  • 1 x 440g can GOLDEN CIRCLE Pineapple Slices (drained)

Method

Mash undrained salmon well. Mix in next 7 ingredients adding 3 slices finely chopped pineapple. Save remaining pineapple for garnish. Press into greased loaf tin and bake for one hour at 160°C. Cool loaf, turn out of tin and chill. Garnish with radish, parsley, celery and pineapple.

 

Serve with tartare sauce.
