Pineapple Shell Salad

Ingredients

  • 250g smoked fish
  • 250g shell macaroni
  • ¾ cup salad dressing
  • 1 x 440g can GOLDEN CIRCLE Pineapple Pieces (drained)
  • ½ capsicum (cut into thin strips)
  • 1 cucumber (diced)
  • 4 shallots (chopped)
  • 2 tablespoons parsley (chopped)

Method

Simmer the fish in water until tender. Drain well and flake.

 

Cook the macaroni in boiling salted water until just tender. Drain well. While the macaroni is hot pour over the dressing and allow to cool.

 

Toss the remaining ingredients through the macaroni and chill well before serving.
