Sauté celery, shallots and pepper in butter for 5 minutes. Add pineapple pieces and liquid, ginger, soy sauce, lemon juice and seasoning. Bring to boil and simmer for 5 minutes. Place the cleaned fish in a large ovenproof dish or baking pan. Pour over pineapple mixture and bake in a moderate oven, 180°C until fish is cooked.
Lift carefully onto serving platter and top with remaining pineapple mixture. Serves 4-6.
