Golden Circle Polynesian Fish Recipe

Ingredients

  • 1 large whole snapper or bream
  • 1 x 440g can GOLDEN CIRCLE Pineapple Pieces
  • ½ cup sliced celery
  • ½ cup green and red pepper (cut in strips)
  • ½ cup shallots
  • 1½ tablespoons butter
  • 2½cm piece root ginger or ½ teaspoon ground ginger
  • ¼ cup soy sauce
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • freshly ground black pepper

Method

Sauté celery, shallots and pepper in butter for 5 minutes. Add pineapple pieces and liquid, ginger, soy sauce, lemon juice and seasoning. Bring to boil and simmer for 5 minutes. Place the cleaned fish in a large ovenproof dish or baking pan. Pour over pineapple mixture and bake in a moderate oven, 180°C until fish is cooked.

 

Lift carefully onto serving platter and top with remaining pineapple mixture. Serves 4-6.
