Pineapple Curry Sauce

Ingredients

  • 1 x 440g can GOLDEN CIRCLE Pineapple Pieces (drained)
  • 1 tablespoon butter or oil
  • 1 cup chopped onion
  • ½ cup diced green pepper
  • ½ cup diced red pepper
  • ½ cup chopped celery
  • 2 dessertspoons curry powder
  • 3 teaspoons soy sauce
  • 3 fresh ripe tomatoes
  • 1¼ cups water
  • 2 tablespoons plain flour

Method

Heat butter or oil in a saucepan. Add onion, pepper and celery and cook until onion is tender. Stir in curry powder and soy sauce. Skin and slice tomatoes, add to saucepan with water. Cover and simmer for 15 minutes.

 

Mix flour to a thin paste with a little cold water, blend into sauce and stir until thickened. Add pineapple pieces.

 

Serve with fluffy white boiled rice.
