Golden Circle Tropic Island Salad Recipe

Ingredients

  • 1 x 440g can GOLDEN CIRCLE Pineapple Pieces (drain, reserve liquid)
  • 1 head lettuce (torn into bite size pieces)
  • 3 firm tomatoes (cut into wedges)
  • 1 cup sliced cucumber
  • 1 cup cheddar cheese cubes
  •  

    Golden Dressing

  • 3 tablespoons oil
  • 2 tablespoons lemon juice
  • 2 tablespoons pineapple liquid
  • pinch of mustard
  • salt and pepper to taste
  • 1 tablespoon parsley

Measurements guide

Method

For dressing: combine all ingredients and mix till well blended. Paprika and crushed garlic may be substituted for mustard if desired.

 

For salad: gently toss ingredients and refrigerate.

 

To serve, pour dressing over salad and toss.
