Ingredients

  • 3 tablespoons plain flour
  • ⅓ cup cornflour
  • 1 teaspoon baking powder
  • ½ cup milk
  • 1 x 825g can GOLDEN CIRCLE Pineapple Slices (drained)
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • plain flour
  • oil for frying
  • icing sugar

    Sauce

  • 1 cup of the drained pineapple liquid
  • ½ cup sugar
  • 2 reserved pineapple slices (chopped)
  • 1 dessertspoon cornflour
  • 1 dessertspoon butter
  • pinch salt
  • juice ½ lemon

Method

For the fitters: reserve 2 pineapple slices for sauce. Place 6 pineapple slices in bowl, sprinkle over sugar and lemon juice. Stand for 1 hour. Sift 3 tablespoons flour, cornflour and baking powder into bowl. Make a well in centre, gradually add milk, mix to a smooth batter. Drain pineapple slices well and toss in plain flour. Dip in batter and fry in hot oil until golden brown. Drain, dust with icing sugar.

 

For the sauce: mix cornflour, sugar, pineapple pieces and liquid. Cook, stirring until mixture boils and thickens. Cook a few moments, add lemon, butter and salt. Simmer for 1 minute. Spoon over fritters.
