Pineapple Rice Ambrosia

Ingredients

  • 1½ cups cooked white rice
  • 1 x 440g can GOLDEN CIRCLE Crushed Pineapple (drained)
  • grated rind of 1 orange
  • 1 tablespoon honey
  • 2 bananas mashed with juice ½ lemon
  • 2 egg whites
  • 4 tablespoons sugar
  • whipped cream
  • toasted coconut or passionfruit to decorate

Method

Combine rice, pineapple liquid and orange rind. Cook over moderate heat till almost all liquid is absorbed. Add honey and cool. Then add pineapple and bananas.

 

Whip egg white and sugar gradually to meringue consistency. Fold into pineapple rice, serve in glass bowl or individual serving dishes.

 

Top with whipped cream and toasted coconut or passionfruit pulp.
