Golden Circle Fijian Pineapple Pie Recipe

Ingredients

  • 1 pie shell (20 cm)
  • 1 x 440g can GOLDEN CIRCLE Crushed Pineapple (drained)
  • ½ cup fruit mince or mixed dry fruit*
  • 1 teaspoon dark rum (optional)
  •  

    Meringue

  • 2 egg whites
  • 4 tablespoons castor sugar

Method

Combine pineapple, fruit mince and rum in saucepan and heat. When starting to bubble remove from heat and pour into pie shell. Cool.

 

Make meringue with egg whites and sugar and spoon on top.

 

Place in hot oven for a few minutes to set and lightly brown meringue.

 

* If using mixed fruit, thicken with one teaspoon cornflour mixed to a paste with a little of the pineapple syrup.
