Method
- Place flour into a large bowl. Whisk together the milk, eggs and butter. Stir into flour until batter is smooth.
- Add the GOLDEN CIRCLE corn, both cheeses and chives. Season well and mix.
- Heat oil in a large non-stick frying pan over medium heat. Add spoonfuls of mixture to pan and cook for 2 minutes each side until golden. Drain on paper towel.
- Serve warm topped with smashed avocado, sour cream and herbs of your choice.
Tip: Pair with a light rocket and roast pumpkin salad with balsamic dressing for a refreshing and tasty lunch meal!
