Method For the fitters: reserve 2 pineapple slices for sauce. Place 6 pineapple slices in bowl, sprinkle over sugar and lemon juice. Stand for 1 hour. Sift 3 tablespoons flour, cornflour and baking powder into bowl. Make a well in centre, gradually add milk, mix to a smooth batter. Drain pineapple slices well and toss in plain flour. Dip in batter and fry in hot oil until golden brown. Drain, dust with icing sugar. For the sauce: mix cornflour, sugar, pineapple pieces and liquid. Cook, stirring until mixture boils and thickens. Cook a few moments, add lemon, butter and salt. Simmer for 1 minute. Spoon over fritters.
