Method Drain pineapple pieces and reserve the liquid. Prepare Nestlé liquid ice cream mix as directed, folding in pineapple pieces and chopped mint after final beating. Freeze. At serving time, pile ice cream in sundae dish and be generous with this special sauce: place reserved pineapple juice in small saucepan over low heat. Add cornflour blended in a little cold water, lemon juice and sherry. Bring to boil and simmer for 1 minute. Serve hot or cold.
