Method

Mix beef, sausage mince, breadcrumbs, egg, onion, green pepper, salt and 3 tablespoons of the crushed pineapple. Press lightly into greased loaf pan and bake at 180°C for one hour.   Drain off excess fat and invert on to oven-proof platter, return to oven for 15 minutes to colour sides and top. Blend cornflour with a little pineapple liquid. Bring remaining ingredients to the boil. Thicken with cornflour. Add a little chopped pimento if liked.   Pipe creamed potatoes around loaf, pour sauce over top and serve. Serves 6.
