Method Drain beetroot, lay lettuce leaves over salad platter. Mound beetroot in centre of platter. Drain beans and combine with chopped red pepper, spoon around beetroot. Drain pineapple liquid, reserving 2 tablespoons. Place pineapple pieces around edge of platter. Combine mayonnaise, horseradish and pineapple liquid. Blend well and pour onto beetroot.
