Method
Cut pork into small, thin strips. Heat oil in a large pan, add pork, garlic and onions. Fry until lightly browned. Add almonds and fry for one minute. Mix together ginger, lemon rind and sugar and add to the pork mixture and continue frying gently for a few minutes. Add stock, pineapple, capsicums and cook gently until meat is tender. Thicken slightly with blended cornflour and serve with boiled rice.
