Method

Roll pastry out and use portion to line 20cm pie plate. Combine remaining ingredients and fill pie plate. Top with remaining pastry, making slits to allow steam to escape during cooking. Brush with beaten egg, if desired.   Bake in moderate oven for 30 minutes.
