Method Cut meat into small cubes and cook with oil in microwave oven on full power until meat changes colour, approx. 4 minutes. Add onions and carrots and microwave a further 3 minutes. Stir in curry powder, brown sugar, sultanas and apple. Measure juice from can of pineapple and enough water to make one cup. Pour into meat mixture and stir. Cover and cook on simmer 40-45 minutes or until meat is tender. Stir occasionally during cooking. Mix cornflour with a little extra water to a smooth paste, add to 1 extra cup water and stir into curry with pineapple pieces. Microwave on full power 4 minutes. Serve with boiled rice. Serves 6.
