Method Drain pineapple pieces. Reserve liquid. Add half pineapple to mashed potato together with the grated cheese, chopped onion, parsley and celery. Season to taste. Wash silverbeet or spinach. Slice off white stems, steam till tender and place in bottom of buttered casserole. Top with potato mixture and bake in moderate oven until browned. Top with the required number of fried or poached eggs and the steamed green tops of the silverbeet. Garnish with the remaining pineapple pieces heated in their own liquid.
