Method Combine all ingredients with the exception of pineapple and bacon. Pack half the meat into lightly greased loaf tin and make an indentation along the centre. Place crushed pineapple in the indentation, then put the rest of the meat on top. Top with bacon. Bake in moderate oven for about 1 hour – until loaf shrinks slightly from the sides of the pan. Allow to stand in tin for 5 minutes. Unmould. Serves 6-8.
