Ingredients

Marinade
1/3 cup Heinz Tomato Ketchup
1/3 cup soy sauce
¼ cup brown sugar
2 tbsp rice wine vinegar
2 tsp each freshly grated ginger & garlic
1 tsp chilli flakes, optional
Salsa
1 Lebanese cucumber, roughly chopped
1 green jalapeno chilli, deseeded & chopped
¼ cup chopped coriander leaves
3 spring onions, chopped
Juice of 1 lime, extra lime wedges for serving

Step 1
Preheat oven to 180°C / 160°C fan-forced.
Step 2
Pour the Golden Circle pineapple juice into a mixing bowl with the marinade ingredients. Place the pineapple pieces in a salad bowl with the salsa ingredients and mix well. Refrigerate the salsa until ready to use.
Step 3
Pour the marinade over the chicken in a deep roasting tray. Bake 45 minutes, then grill for 5 minutes to caramelise the chicken on top. Serve with pineapple salsa.

This recipe can also be cooked in a slow cooker
