Pineapple and Ginger Stir Fry

Ingredients

1 tbsp peanut or vegetable oil
½ ½ red onion, sliced
2 cm piece ginger, finely grated
2 cloves garlic, crushed
3 long red chillies
600g chicken thighs, finely diced
100g green beans
440g Golden Circle Australian Pineapple Pieces, in Juice
2 tbsp oyster sauce
2 tbsp soy sauce
2 cups picked Thai basil leaves
Steamed jasmine rice, to serve

Step 1
Heat oil in a wok over high heat. Add the onion, ginger, garlic and chillies. Stir-fry for 1 minute then add the chicken, cooking for another 2-3 minutes, or until golden.
Step 2
Add the green beans, Golden Circle Pineapple Pieces with 2 tablespoons of reserved pineapple juice. Add the oyster sauce and soy sauce. Stir-fry for 2 minutes, until the sauce coats the chicken evenly.
Step 3
Turn off the heat and stir in the Thai basil leaves. Serve with steamed rice.
